It is a nutritive sweetening agent that offers many beneficial attributes and is the ideal substitute for highly refined sugar and nonnutritive syrups. It comes in various types and grades, depending on milling and refining processes: Unsulphured Imported Molasses a high quality pure cane juice characterized by a light color and delicate flavor. It is sweeter than other Molasses grades because it contains all the sugar of the original sugar cane. New Orleans Molasses derived from domestic pure cane, the flavor difference between New Orleans and Imported Molasses results from the shorter ripening time allowed for the domestic cane. Blackstrap is the final residue from which no additional crystalline sugar can be extracted economically. This product has the lowest sugar profile but packs the highest flavor profile. Refiners Syrup a standardized cane juice product that has a distinctively sweet, light flavor and aroma. Refiners syrup displays a stronger flavor than molasses and combats bitter bran and germ flavors at usage levels lower than needed for molasses. It is an excellent colorant and eliminates the need for artificial color, as well as being used to uniformly regulate dough fermentation of dark breads and dark bakery products.
