Use: Clove is one of the most important spice of commerce. Cloves are the unopened flower buds of small evergreen tree. The tropical tree known as Syzygium aromaticum and botanically popular as Eugenia Carryophyllus produces the commercially valuable cloves. The Ordour, flavours and Oil content are important criteria in the food industry. Sri Lankan Cloves have been found to be richer in Oil than those from Madagascar and Tanzania. The plant grows to a height of 12-15 meters and takes 20 years to reach full bearing and then continue to bear fruit for about 50 years. The Clove is a pretty tree with reddish tender leaves. The major spice is the unopened flower bud which is harvested along with it’s steam and dried in the shade. The buds and steams are dried separately. The drying process has to be carefully monitored as it is akin to a curing process, and the quality of the aroma develops during this stage. Oils are distilled from the buds, stems and leaves. The authentic Oil of Clove is Clove Bud Oil with the fragrant and mellow aroma. The Sri Lankan distilled Oil has a high demand and is renowned for it’s superior aroma and pungency. Use: This tropical tree was discovered on the Molucca Islands and cultivated since the early 19th century. When clove buds are about to open, they are picked and sun dried for three days during which they obtain their dark colour and particular shape. They are then either sold as a spice or processed to obtain the extract. The leaves and twigs are also extracted to confer an herbaceous tone to fragrance compounds.
