para-anisaldehyde
p-methoxybenzaldehyde

Notes:
Found in anise oil, fennel and vanilla. Flavouring ingredient Anisaldehyde, or anisic aldehyde, is an organic compound that consists of a benzene ring substituted with an aldehyde and a methoxy group. It is a clear colorless liquid with a strong aroma. It comes in 3 varieties, ortho, meta, and para in which the two functional groups (methoxy and aldehyde) are alpha, beta, and gamma, respectively to each other. The unmodified term anisaldehyde generally refers to the para isomer. Anisaldehyde is found in anise, from which it gets its name. It is similar in structure to vanillin. (Wikipedia)

      Anisaldehyde
Arctander gives some good indications of its useage: “Very widely used in perfumery, only restricted because of its poor stability in alkali and in the presence of Amines. Certain fragrance types may contain well over 10% of this aldehyde, while a few percent or less can introduce satisfactory effects in other types. It is an excellent companion to the sharper aldehydes, will round them off and reduce their pungency.”

IFRA FLAVOR REQUIREMENTS:

Due to the possible ingestion of small amounts of fragrance ingredients from their use in products in Categories 1 and 6, materials must not only comply with IFRA Standards but must also be recognized as safe as a flavoring ingredient as defined by the IOFI Code of Practice (www.iofi.org). For more details see chapter 1 of the Guidance for the use of IFRA Standards.
