Use: The nutmeg tree is a pyramid-shaped tree that grows up to 15 meters high. The fruit is a fleshy, pale-yellow drupe resembling an apricot. Once ripe, the fruit’s pulpy pericarp half-opens into two parts, to reveal a single seed protected by a brown shell. This seed, with high essential oil content, is what is used in the distillation process. It is surrounded by a bright red-orange aril that streaks the hull with color. The fruits are picked when mature with a long-handled, basketed “fruit-picker” making it possible to harvest fruit from high in the tree. The stripped seeds are dried in the shade to prevent deterioration of the lipids (the melting point being 38°C). After six to eight weeks, the inner kernel has dried sufficiently and can be freed from its outer rigid shell. It takes seven years for a nutmeg tree to produce its initial crop. Productivity increases with age, with an optimum yield occurring when the tree is between 15 and 30 years old.

Use: Nutmeg (Muristica fragrance) is a native of Moluccas in east Indonesia and is reported to have been introduced to Sri Lanka in the early nineteenth century. It’s a spreading evergreen tree 15-20 m high, Flowers are generally unisexual. Bisexual flowers also occur. Occasional trees with male and female flowers are seen in plantations. Fruits are fleshy drupes, which turns yellow when ripe and split in to two halves exposing purplish brown shiny seed surrounded by a net like red aril called Mace. Nutmeg free yields two spices, Nutmeg which is the kernel of the seed and mace, which is the net like crimson coloured leathery outgrowth (aril) covering the shell of the seed. Separate Essential Oils are distilled from the spice Nutmeg as well as from the Mace. Our Oil of Nutmeg is processed from Nutmeg obtained from up country in Sri Lanka, partially matured and dried (cured) Nutmeg’s give the best Oils and highest yields. Mace Oils on the other hand are best when the Mace originates from fully matured fruits.

Use: Arctander has this to say “Nutmeg Oil is a pale yellow or almost water white mobile oil of a light, fresh, warm-spicy and aromatic odor, a distinctly terpeney top note and a rich, sweet-spicy, warm bodynote. The undertone and dryout is somewhat woody, but remains warm and sweet in good oils. There is some similarity to the odor of sweet marjoram oil.

Use: The nutmeg tree, native to the Molucca Islands, gives two spices derived from the fruit: nutmeg and mace. Nutmeg is the seed of the tree while mace is the reddish wrapping round the kernel. The oil is usually obtained from damaged nuts that are unsuitable to be sold as a spice. Nutmeg is probably the only nut that nations have fought over. Most of the Molucca Islands were under the Dutch rule during the colonial era so they could control the nutmeg production and trade.
