Notes: an oxidoreductase that catalyzes the conversion of hydrogen peroxide to water and oxygen. it is present in many animal cells. a deficiency of this enzyme results in acatalasia. Converts H2O2 into O2 + H2O; can also act as a peroxidase for which several org. substrates, esp. EtOH, can act as hydrogen donor. Used in the food industry to remove traces of H2O2 in the sterilisation of milk for cheese making [DFC]
