Notes: a water-soluble extractive mixture of sulfated polysaccharides from red algae. chief sources are the irish moss chondrus crispus (carrageen), and gigartina stellata. it is used as a stabilizer, for suspending cocoa in chocolate manufacture, and to clarify beverages.
