      Joseph Colbourne has this to say about Pistachio CO2 (SELECT) “With its yellow-orange color and moderate viscosity, this carbon-dioxide extraction from Turkey really does have the aroma of roasted pistachio nutmeats. Salty, nutty, slightly sweet, and just tiny bit smoky, this is a very unusual and delectable material with good projection and longevity. In the dry down, the saltiness and roasted quality dissipates and there is more of a clean, woody, nutty aroma. The milder base is reminiscent of not only pistachios but brazil nuts and macadamia nuts. Pistachio CO2 would surely be a pleasure to experiment with: it could be blended with vetiver, nagarmotha, agarwood, other dry woods, green notes, florals, even marine accords.”
