dcpa=dicalcium phosphate anhydrous; don't confuse with dichloropropionanilide which also is called dcpa; mw=136.06; has greater surface area and lower ph than dcpd (dicalcium phosphate dihydrate); occurs in nature as monetite; an intermediate in preparing hydroxyapatite. Used in foods as a leavening agent, stabiliser and thickener, nutrient, pH control agent, masticatory substance, moisture control agent, emulsifier, and appearance control agent for colours and colour modifiers
